Description

Ingredients

  • 1 cup almond paste
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, combine almond paste and granulated sugar. Beat with an electric mixer until well combined.
  3. Add softened butter and continue beating until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in almond extract.
  6. In a separate bowl, sift together flour, baking powder, and salt. Gradually add to wet ingredients, mixing gently until just combined.
  7. Pour batter into prepared pan and smooth it out evenly.
  8. Sprinkle sliced almonds over the top.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For substitutions, marzipan can replace almond paste, and almond extract can be swapped for vanilla extract.
