- 1 cup almond paste
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon almond extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sliced almonds (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, combine almond paste and granulated sugar. Beat with an electric mixer until well combined.
- Add softened butter and continue beating until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in almond extract.
- In a separate bowl, sift together flour, baking powder, and salt. Gradually add to wet ingredients, mixing gently until just combined.
- Pour batter into prepared pan and smooth it out evenly.
- Sprinkle sliced almonds over the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For substitutions, marzipan can replace almond paste, and almond extract can be swapped for vanilla extract.
