  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped green onions
  • 1/4 cup pickled jalapeños, chopped (more or less to taste)
  • Crackers, for serving

Instructions

  1. Soften the cream cheese at room temperature or microwave until soft but not melted.
  2. In a large bowl, combine softened cream cheese and mayonnaise, beat until smooth.
  3. Add dry ranch and Italian dressing mixes, blending until incorporated.
  4. Mix in the undrained chopped green chilies evenly.
  5. Add cheddar and Monterey Jack cheeses, stirring well to combine.
  6. Incorporate chopped green onions and pickled jalapeños, adjusting jalapeño amount based on preference.
  7. Cover and refrigerate for a minimum of 2 hours, ideally overnight.
  8. Stir before serving, transfer to a serving bowl, and serve with crackers.
