Description
Afang Soup is a delicious and nutritious dish from Nigeria, combining meats and leafy greens into a thick, flavorful soup.
Ingredients

- 2 cups Afang leaves (or spinach as a substitute)
- 2 cups waterleaf (or any leafy vegetable as a substitute)
- 500g assorted meat (goat or beef)
- 200g smoked fish
- 1 cup palm oil
- 1 onion, chopped
- 2–3 tablespoons ground crayfish
- 1–2 tablespoons ground pepper (to taste)
- Salt (to taste)
- 2 cubes of seasoning (optional)
Instructions
- In a pot, boil the assorted meat with chopped onions, seasoning cubes, and salt until tender, adding enough water to cover the meat. Bring to a boil, then reduce heat and let it simmer for about 30-45 minutes.
- Add palm oil and smoked fish to the pot and allow to simmer for about 10 minutes.
- Gradually add Afang leaves to the pot, followed by waterleaf, stirring to combine.
- Cook for another 5-10 minutes, adding ground crayfish and pepper, adjusting seasoning as necessary.
- Serve hot, adjusting taste with salt or seasoning if needed.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat as needed.
