- 1 packet (2¼ tsp) active dry yeast
- 1 cup warm milk (110°F / 43°C)
- 2 tbsp granulated sugar
- 3 cups all-purpose flour (360g)
- 1 tsp salt
- 1 egg
- ¼ cup unsalted butter, softened
- Kitchen twine or unflavored dental floss (for shaping)
- Optional: rosemary sprigs or pecan halves for stems
- Extra butter for brushing
- Fillings: Roasted turkey, cranberry sauce, arugula; Ham, cheddar, Dijon mustard; Grilled veggies and hummus; Caprese (mozzarella, tomato, basil); Chicken salad or tuna salad
Instructions
- Mix warm milk, sugar, and yeast. Let sit 5–10 minutes until bubbly.
- Combine flour and salt. Add yeast mixture, egg, and butter. Knead 8–10 minutes until smooth.
- Cover dough in oiled bowl. Let rise 1 hour until doubled.
- Divide into 12 balls. Tie loosely with twine in crisscross to form pumpkin ridges.
- Place on parchment-lined sheet. Rise 30 minutes.
- Preheat oven to 350°F (175°C). Bake 18–20 minutes until golden. Cool slightly.
- Remove twine. Insert rosemary or pecan stems. Brush with melted butter.
- Slice buns and fill with chosen ingredients.
Notes
Use fresh yeast for best results. Measure ingredients accurately and ensure the dough rises properly.
