A quick and delicious BBQ pulled chicken recipe made in the Instant Pot, perfect for busy weeknights.
Ingredients

- 2 lbs chicken breast
- 1 cup BBQ sauce (homemade or store-bought)
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Place the chicken breast in your Instant Pot.
- In a mixing bowl, whisk together the BBQ sauce, chicken broth, olive oil, apple cider vinegar, garlic powder, onion powder, salt, and pepper until fully combined.
- Pour this mixture over the chicken.
- Secure the lid and set the Instant Pot to high pressure for 10 minutes.
- After the timer goes off, allow natural pressure release for 5 minutes, then quick release any remaining pressure.
- Remove the chicken and shred it using two forks.
- Return the shredded chicken to the pot and mix it with the sauce.
- Serve immediately!
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. This dish also freezes well for up to 3 months.
