Description

A quick and delicious BBQ pulled chicken recipe made in the Instant Pot, perfect for busy weeknights.


Ingredients

  • 2 lbs chicken breast
  • 1 cup BBQ sauce (homemade or store-bought)
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast in your Instant Pot.
  2. In a mixing bowl, whisk together the BBQ sauce, chicken broth, olive oil, apple cider vinegar, garlic powder, onion powder, salt, and pepper until fully combined.
  3. Pour this mixture over the chicken.
  4. Secure the lid and set the Instant Pot to high pressure for 10 minutes.
  5. After the timer goes off, allow natural pressure release for 5 minutes, then quick release any remaining pressure.
  6. Remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the pot and mix it with the sauce.
  8. Serve immediately!

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. This dish also freezes well for up to 3 months.
