Quick and delicious vegan burrito wraps filled with black beans, avocado, and fresh ingredients, perfect for a busy weeknight meal.
Ingredients

- 1 (15-ounce) can of black beans, rinsed and drained
- 1 large ripe avocado, mashed
- ½ cup of frozen or canned corn, thawed or drained
- ¼ cup of finely chopped red onion
- ¼ cup of fresh cilantro, chopped
- 1 tablespoon of lime juice (freshly squeezed)
- ½ teaspoon of cumin powder
- ¼ teaspoon of chili powder
- Salt and black pepper to taste
- 4 large (10-inch) flour tortillas (or whole wheat/gluten-free options)
Instructions
- In a medium-sized mixing bowl, mash the ripe avocado with a fork until desired consistency is achieved, then stir in lime juice.
- Add rinsed black beans, thawed corn, chopped red onion, and fresh cilantro to the bowl. Sprinkle cumin powder, chili powder, salt, and black pepper on top.
- Gently fold the ingredients together with a spatula, being careful not to mash the beans too much.
- Optionally, warm the tortillas in a skillet for 15-20 seconds per side or microwave wrapped in a damp paper towel.
- Lay a warm tortilla flat and place about a quarter of the filling in the center. Fold in the sides of the tortilla and roll it up tightly from the bottom.
- Serve immediately while tortillas are warm and filling is fresh. Slice in half for presentation or serve whole.
Notes
These wraps can be served with salsa, guacamole, or fresh salad. They can also be stored in an airtight container in the refrigerator for up to 3 days.
