Description

Quick and nutritious vegan burrito wraps filled with black beans, avocado, and fresh cilantro, perfect for any meal.


Ingredients

  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 large ripe avocado
  • ½ cup of frozen or canned corn, thawed/drained
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • ½ teaspoon cumin powder
  • ¼ teaspoon chili powder
  • Salt and black pepper, to taste
  • 4 large (10-inch) flour tortillas (whole wheat or gluten-free options also work)

Instructions

  1. Mash the avocado in a medium bowl until desired consistency and mix in lime juice.
  2. Add black beans, corn, red onion, cilantro, cumin, chili powder, salt, and pepper. Fold together gently.
  3. Warm tortillas in a skillet or microwave until pliable.
  4. Place a quarter of the filling in each tortilla, fold the sides in, and roll tightly.
  5. Enjoy immediately, cutting in half for presentation if desired.

Notes

These burrito wraps pair well with tortilla chips and salsa or a fresh green salad. They are also freezer-friendly for up to three months.
