- 1 (15-ounce) can of black beans, rinsed and drained
- 1 large ripe avocado
- ½ cup of frozen or canned corn, thawed/drained
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- ½ teaspoon cumin powder
- ¼ teaspoon chili powder
- Salt and black pepper, to taste
- 4 large (10-inch) flour tortillas (whole wheat or gluten-free options also work)
Instructions
- Mash the avocado in a medium bowl until desired consistency and mix in lime juice.
- Add black beans, corn, red onion, cilantro, cumin, chili powder, salt, and pepper. Fold together gently.
- Warm tortillas in a skillet or microwave until pliable.
- Place a quarter of the filling in each tortilla, fold the sides in, and roll tightly.
- Enjoy immediately, cutting in half for presentation if desired.
Notes
