Quick and nutritious vegan burrito wraps filled with creamy avocado, black beans, and corn, perfect for a meal on the go.
Ingredients

- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn, thawed if frozen
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a medium bowl, mash the ripe avocado using a fork until desired consistency.
- Stir in the freshly squeezed lime juice.
- Add in the rinsed black beans, thawed corn, chopped red onion, and chopped cilantro.
- Sprinkle cumin powder, chili powder, salt, and black pepper over the mixture.
- Gently fold all ingredients together, being careful not to overmix.
- Optional: Warm tortillas in a dry skillet.
- Lay a tortilla on a surface, fill it with a quarter of the bean and avocado mix, and roll it up snugly.
- Repeat with remaining tortillas and filling.
- Cut in half or serve whole, and enjoy immediately!
Notes
Best enjoyed fresh but can be refrigerated for up to 2 days or frozen for 3 months.
