10-Minute Vegan Burrito Wraps

Description

Quick and nutritious vegan burrito wraps filled with creamy avocado, black beans, and corn, perfect for a meal on the go.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn, thawed if frozen
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a medium bowl, mash the ripe avocado using a fork until desired consistency.
  2. Stir in the freshly squeezed lime juice.
  3. Add in the rinsed black beans, thawed corn, chopped red onion, and chopped cilantro.
  4. Sprinkle cumin powder, chili powder, salt, and black pepper over the mixture.
  5. Gently fold all ingredients together, being careful not to overmix.
  6. Optional: Warm tortillas in a dry skillet.
  7. Lay a tortilla on a surface, fill it with a quarter of the bean and avocado mix, and roll it up snugly.
  8. Repeat with remaining tortillas and filling.
  9. Cut in half or serve whole, and enjoy immediately!

Notes

Best enjoyed fresh but can be refrigerated for up to 2 days or frozen for 3 months.
