Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn, thawed if frozen
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice, freshly squeezed
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. Mash the avocado in a medium bowl until smooth or slightly chunky.
  2. Stir in the lime juice to keep the avocado vibrant.
  3. Fold in the black beans, corn, chopped onion, and cilantro.
  4. Sprinkle with cumin, chili powder, salt, and pepper, adjusting to taste.
  5. Warm the tortillas briefly in a skillet or microwave for better pliability.
  6. Lay a tortilla flat, place about a quarter of the filling in the center, and roll it up.
  7. Serve immediately for the best taste and texture.
